Almond Protein Pancakes (Gluten Free & Refined Sugar Free)

Ingredients (Makes 6–8 small pancakes)
1 cup almond flour
1 scoop vanilla protein powder (whey or plant-based)
1 organic egg
3 egg whites
½ cup unsweetened almond milk
1 tablespoon monk fruit sweetener
1 teaspoon baking powder
1 teaspoon vanilla extract
Pinch of sea salt
1 teaspoon avocado oil (for the pan)

Instructions
In a bowl, combine all dry ingredients.
Add wet ingredients and whisk until smooth.
Heat a pan over medium-low heat and lightly grease with avocado oil.
Pour small portions of batter and cook 2–3 minutes per side until golde
