Almond Protein Pancakes (Gluten Free & Refined Sugar Free)

Ingredients (Makes 6–8 small pancakes)

  • 1 cup almond flour

  • 1 scoop vanilla protein powder (whey or plant-based)

  • 1 organic egg

  • 3 egg whites

  • ½ cup unsweetened almond milk

  • 1 tablespoon monk fruit sweetener

  • 1 teaspoon baking powder

  • 1 teaspoon vanilla extract

  • Pinch of sea salt

  • 1 teaspoon avocado oil (for the pan)


    Instructions

    1. In a bowl, combine all dry ingredients.

    2. Add wet ingredients and whisk until smooth.

    3. Heat a pan over medium-low heat and lightly grease with avocado oil.

    4. Pour small portions of batter and cook 2–3 minutes per side until golde
